Mindo is a town pearched in a cloud forest about 2 hours west and a little bit north of Quito. It reminded me a lot of my trip to Costa Rica with my mom and brothers just before I left for Ecuador. We stayed in a beautiful hostal ($6.50/night) with wooden cabins with porches and hammocks and a cool covered area with a ping-pong table and a pool table. While there we went to a sanctuary for orchids, hummingbirds & butterflies. We also went ziplining, innertubing down rapids, hiking and swimming in a beautiful waterfall. Upon recounting this list of activities, I can't believe how 'adventurous' the less-than-48 hours were. Yay, Ecuador.
I kept kosher for passover by bringing food with me (that Mom and Joe sent me) and eating empanadas de verde (made from plantain flour). Deeelicious.
